Characteristics and production process:
after the harvest, the best grapes are softly pressed with immediate separation of the must from the skins (vinification  in white). The first fermentation takes place in stainless steel tanks with selected yeasts at controlled temperature.

The second fermentation takes place again in stainless steel tanks but in isobaric condition to maintain the pressure.  The wine remains for a long period – almost 12 months – in these tanks in contact with lees, the process called  “sur lies” . After this period, the wine undergoes to refrigeration, stabilization and to isobaric filtration and bottling. Thanks to this technique, the wine enriches its sensorial profile and its roundness.

Origin: Oltrepò Pavese (Lombardia), Italy
Alcohol degree: 12% vol.

Colour: Straw yellow, thin and persistent perlage
Bouquet: Typical, clear and pleasant Fruity (black cherries) and slightly spicy (Cinnamon and Mint)
Taste: Dry and harmonic
Suggested glass: Flute
Serve at: 6/7° C
Store: in a cool and dry place
Suggested shelf life: 18/24 months
